Baptism Brunch Ideas

A great friend of mine asked me if I would be interested in doing the food for a Baptism. I thought I would plan out what I might do here.

This would be a lunch time Baptism so I think there could be two different types of menus - a lighter brunch menu or a lunch menu.  This post will cover the brunch menu ideas.

Brunch
I love brunch.  Great food options and still not too late for a great Mimosa! My brunch menu would include Chicken Salad on Croissants, Curry Rice Salad, and Fruit Salad.

Chicken Salad on Croissants

Ingredients:
- 3 cups pre-cooked chicken strips chopped into small pieces (I get mine at Costco. You can also cook chicken breasts in chicken stock)
- 1 cup red grapes sliced in half
- 1 cup celery chopped (small pieces)
- 1/2 cup cashews
- 10-12 Fresh croissants (I like to use the small croissants (again from Costco).
For the sauce: 
- 1 cup mayo
- 1 tablespoon dill
- 1 tsp garlic salt

Mix together all the ingredients and the sauce. You can make this a few hours ahead of time to get the tastes to all mix together. Do not put on the croissants until shortly before serving.

Curry Rice

I generally make this with chicken but if this plus the chicken salad sandwiches is overkill on the chicken you can definitely leave it out.  You can also substitute pineapple or apples for the grapes.

Ingredients
- 2 cups white uncooked rice
- 4 cups chicken stock
- 1 package Lipton Noodle Soup
- 1 cup red grapes sliced in half
- 1 cup celery chopped
- 1/2 cup red onion chopped
- 1 cup cooked chicken breast cubed (optional)
- 3 tablespoons curry spice
- 1 tablespoon garlic salt
- 1 cup sour cream

Cook the rice in the chicken stock.  About half way through the cooking of the rice add the lipton noodle soup noodles and mix.  Stir to mix.

Mix together the cooked rice, celery, onion, grapes and chicken.  In a small bowl mix together the sour cream, curry and garlic salt.  Stir into the rice. This can also be made ahead and kept in the refrigerator until you are ready to serve.



This could be served as shown above or I love single serving salads.











Fruit Salad - I think everyone likes different fruits in their fruit salad. Pretty much any fruit can be used depending on your theme - melons, tropical, etc. Some serving ideas:

Drinks


If you are OK with having alcohol at your Baptism a Mimosa bar is a great way to complete your Brunch.  I like to use Pomegranate Juice, Orange Juice and Cranberry Juice.  Put each in cute pitchers and serve with champagne.
